Peanut Butter Oreo Brownie

So I've been a bit slack on the cooking front. But here is a new recipe that I think is well worth the wait. In saying that I should warn you, it is not for the faint hearted (or those who can't hold their sugar). I've combined two recipes to make the ultimate brownie that will probably have you lapsing into a sugar coma. 


INGREDIENTS

250g Butter, softened
1 3/4 cups sugar
1 cup Crunchy Peanut Butter
2 eggs, plus 1 egg yolk
2 tsp vanilla
2 cups Plain Flour
3/4 cup dark choc chips 
20 original oreo biscuits (approx)
1/2 cup peanut butter, extra
200g dark chocolate, melted

To make the Brownies...
Pre heat oven to 170 degrees celsius.
On a high speed, cream together butter and sugar until fluffy. Add the eggs, the yolk and vanilla until well combined. Beat in peanut butter. Reduce mixer speed, add flour and mix well. Stir in the chocolate chips by hand. 

Place mixture into a lined square or rectangle cake tin, with baking paper going up over the sides (this will make it easier to pull the brownie out). Press roughly 9-10 Oreo biscuits into the mixture so they are even with the top of the batter. 

Bake for 25-30minutes, or to your desired gooeyness. 


When brownie is cooked, remove from the oven and spread with peanut butter (this acts a glue for the top layer). Once covered with the extra peanut butter, cut up the remaining Oreo's and sprinkle over the brownie. Place back into the oven for 3 minutes.


After 3 minutes, remove from the oven and drizzle with melted chocolate. Allow to cool before cutting.
